Help me decide what to do with small shrimp and green onion sausage

I've got like 3 pounds of 50/60s that the wife defrosted, I found some green onion sausage that needs to get cooked.... then realized wife set grocery pickup for tomorrow and not today...
So no onions, flour for a Roux, bell peppers...
Have rice, garlic and a few other things.
I'm thinking a half arse jambalaya?
Help me out

Shrimp and sausage fried rice. I’ve made it a number of times. Got any veg like carrots or mushrooms? Any frozen peas? Jambalaya fried rice.
