Well I’ve asked a few of the most popular places on Facebook and they their cold boudin is indeed fully cooked.

The original owner has been opening several of them and then sells him
Have no idea why
But the quality definitely suffers when he sells them
Not sure if he's hoping the new owners will continue to buy his products to sell or what's going on but I stopped going to the local one here

That's ashamed. Last time we were there I remember seeing it opening soon and would have looked forward to getting it next time.
