Subtle brag I’m in Destin for a week. We didn’t make a trip last year because of the Vid.

Went by there today and it’s now Joris Specialty Meats. Bought some boudin and pork/pepper jack sausage. 3 links in each pack. Cooked 2 of each tonight with burgers and saved 1 link of each for steak night. Complete crap garbage. The boudin was basically par boiled rice with Cajun seasoning in a casing and the sausage wasn’t any better. I would prefer getting mass produced Zuma boudin out of Texas than this crap. I hate to waste food but threw the cooked and uncooked away. Just wanted to let you know to stay away from this place because it’s not what it was a couple of years ago.

And I never ordered the "Cajun spiced chicken" when I was in the UK. You should know this.

It was originally Heberts Specialty meats and they were from Youngsville and it was good. This new ownership is crap.

I'm not...Destin is such a seasonal town it probably couldn't make it....I just pack up an ice chest full of louisiana food when I'm headed there...

Over the years, I have learned that east of Slidell, west of Lake Charles, or north of Alexandria - "Cajun" almost always means "with additional cayenne".

Just don't do it.

The rice mixture is cooked but then it’s stuffed into a raw pork casing. So it’s considered not cooked.

Once it is stuffed in the casing it is cooked in simmering water. When you buy cold boudin it is a fully cooked product.

Not if you buy it cold. It’s not simmered in water until they cook it to sell it hot. If they pack it, it’s not cooked.

It is true. Perhaps a specialty shop here or there does it your way, but you will find the majority do not.

Also , I know rouses is now carrying Billy’s boudin in their stores. Do you think it is “uncooked?”

Is there a safe handling label on the pack? Most boudins will be required to have one due to the casing. They will say ready to cook, not fully cooked, and/or tell you to cook to an internal temperature of 165. Why? Because it is NOT fully cooked and cannot be labeled as such. So yes, it’s uncooked.

Do you KNOW if Billy’s is simmering their casing before packing? They may. But what I’m telling you is the majority are not.

Is Billy’s in Rouses? I didn’t know they got USDA inspected.
