Has anyone ever sous vide a pork tenderloin for 12 hours? (Updated with pics)

I put one in before 8 this morning and I won't be home till shortly before 8 tonight. I figured I would give it a shot since I wasn't going to have time to cook this evening any ways. Should I pick something else up on the way home or will it turn out fine? TIA





It held up its texture pretty well. 3 hours is definitely better but if I’m ever in a crunch I will not hesitate to do it again.

well it's not going be overcooked, but the texture might be different than what you are used to

12 hours is a long time (too long) for a tenderloin IMO

Report back, I've always been curious how something like this would hold up if I set something out before work or at lunch to save time at night.

No, not that long... but I've done them for 4 or 5 hours before and they were amazing.

I've done pork ribs for 36ish hours, also amazing.

Yeah I've done lamb and steaks for 4 hours and the texture really started to get on the mushy side. Wouldn't do that again. I know pork is a different animal and all, but I imagine a tenderloin would react similarly.

Yep, it's not called a "tenderloin" for nothing. One of the most tender pieces of pork available.

It takes me no more than 15 minutes on the grill once the grill is hot enough to cook on----if that long. I'll marinate the loin for several hours prior to grilling and they come out great.

That's 12X longer than I usually do mine in the water bath

I haven't seen anywhere where they recommend more than 4 hours.

May be a weird pulled pork tenderloin you come home too. Let us all know

I may try this. Can't smoke at the house we are currently in while we are building, so this may be a great way to get some ribs. What temp you set and for how long?

Shouldn't be a problem for pork, just make sure to get a good sear.

Over cooked imo.

I’d go for 113 for 3 hours.

Rest then sear to 125. I like it medrare-med.

Definitely over cooked, my old lady isn’t a fan medium rare to medium pork. So I go for medium well.

I still haven't seen a temperature mentioned but it looks dry and cooked at too high of a temp for my preference. I usually go 135 for over an hour.
