re: Has anyone else noticed a trend among Pizza Places with undercooking their pizzas?

I used to love Pizza Hut. It isn’t fit to eat now. The crust is thin and floppy and tastes like bisquick. It used to be thick, chewy and yeasty (insert joke here). The little Caesar’s Detroit style is the closest to what PH used to be.

I always got thin crust vegetarian, my husband got thick crust meat lover’s pizza. He ordered us each a pizza one time, but the guy questioned the thin crust, saying "does she really want that? It will be dry like a cracker" so my husband changed mine to whatever the guy suggested! When he arrived, the pizza guy had three pizzas ready…My husbands, and both versions for me, because he realized he might have gotten my husband in trouble if he turned up with the "wrong" pizza!
Sooooo, we got a free pizza, but I would not have been mad either way. I mean, the thickness of my pizza crust a total, as you say, "first world problem."

Simple Simons in my town used to be the worse about undercooking pizzas.

I worked for a pizza place during high school. A lot of times, when they're busy, they'll turn up the speed on the conveyor belt, if they use that type of oven.

Don’t eat much delivery pizza, but Jabbys / Blaze etc I always request well done for this reason.

If we only had Fleur de Lis, haaaaaa. At places like Lit just order it extra crispy. Problem solved.

The drivers cook?
Don’t know. Maybe pizza maker pops it in the oven. When pizza maker isn’t looking driver pops it out of the oven a minute early to deliver it.

They are so "all over the place" at Lit, that half the time the crusts are really too charred to the point of being overdone. I'd never ask them to cook mine extra crispy for fear of it being inedible.
I blame the problem with pizzas not being done properly to high staff turnover and being poorly trained to begin with.

I ALWAYS order my pizza "well done" is an option. They put it back in the conveyor oven at the halfway point after it comes out the first time. Gives the crust more of a pizza oven crust and less of an impenger (conveyor oven) crust.

It’s gotten to the point where certain frozen pizzas are better than national pizza chains. Pickup at popular local shops is the way to go, I always order well done on NY style pies.

The best thing I've done is start buying 6" pizza crusts at the grocery store. I keep some cooked down sauce in the freezer and when I want a pizza pull a portion of sauce ,cook the meats, chop the peppers etc and put it in the oven. Today for lunch I made some using Naan bites as lil crusts

order well done and hope it's not burnt to crisp.

Lit Pizza is bad about this.
Not in the sense that the crust is undercooked. I think their oven bottom plate is too hot for their pizza. I typically get a crispy/charred crust on my pizza but the ingredients are almost always room temp still. They only place their pizzas in the oven for 3-4 minutes at max. This is not enough time to cook a raw onion.

I have noticed this at Johnny's and also at a mom-pop place in Athens that used to be great. Papa John's (my only delivery option) I have not noticed this.
