Hanger Steak

Is it really that select of a cut? And if so, where can you find it?

I've purchased it from Central Market. You could probably get it from Whole Foods. You need a place with actual butchers. Places like Walmart receive their meat pre-cut and packaged. They just put it out on the shelves.

The only place I’ve seen it is Cochon BUTCHER. And it was prepackaged there from a purveyor. Not many butchers any more taking apart a whole cow and that’s basically the only way you could get it straight “from a butcher.”
The ones they sell there are good, though.

Central Market has hanger steak available pre-cut into chunks, silver skin removed, and packaged by the butcher. It is in the section with other prepared meats (hamburger patties, meatballs, meatloaf, etc.)
You can also ask the butcher for a whole uncut hanger steak. Behind the counter, they have bags of hanger steaks. Just tell him how many you want.

I've gotten it from Restaurant Depot in New Orleans. Came in a package with like 6 or 8 of them and it was basically cheap.

Only seen it in Whole foods, and even then, I had to ask. Even our smaller butcher shops can't seem to get it, or if they do, they sure as hell aren't selling it to me.

At Restaurant Depot the other day so I checked to see if they had any in stock. They did, in about average 7-8 lb packages selling for $5.46 a lb.
