Hanger Steak Recipes

Recipes, techniques, or pointers for cooking a nice Hanger Steak?

Haven't had a good hanger in awhile.

Grill or broil to med-rare to medium. Texture at rare isn't the best and beyond medium it gets a little tough. I usually just salt and pepper and serve with chimichurri or board sauce. Slice across the grain.

I sous vide and then sear. Keeps them juicy. Make sure you trim off the silver skin.
