Ham Glaze Help?

Anybody know something about ham glaze? I'm trying to replicate a glaze I had many years ago. It came with a spiral-sliced ham I bought at either Zuppardo's or Rouses, in all likelihood. I think it came in a gold foil package.

To me, it seemed to have been spiced with spices like cloves, cinamon, allspice, ginger and others in that vein. Online searches suggested orange zest, ground mustard, cider vinegar and honey.

Does anyone have any insight into this? Maybe spice suggestions or proportions and method.

The bags are basically brown sugar, some type of honey solids (or artificial honey flavor), and spices. Cloves, nutmeg, and/or allspice. Maybe even cinnamon if you please.

It’s hard to mess up a glaze. Here’s what you do: mix brown sugar with root beer or coke. Add the spices listed above. Ground cloves are the main seasoning. There you go. Bake the ham and add the glaze.

Buy spiral sliced ham at grocery, discard pack. Do this


Cajun Baked Ham w/Sugar Cane -Bourbon Glaze
1 fully cooked ham, 6 to 8 lbs.

Glaze
1/2 cup pure cane syrup,( Steen's)
1/2 cup brown sugar
1/3 cup bourbon
1 tsp. creole mustard
dash of ground cloves, cinnamon, and allspice

Place ham, fat side up in a large roasting pan. Place 1 inch of water in bottom of pan and add more periodically. Cover with foil and bake at 325 degrees for about 20 minutes per pound or until meat thermometer reads 148 degrees. About half way through, make the glaze. Combine all glaze ingredients in a medium saucepan and bring to a boil for 2 minutes and remove from heat. Remove foil and spread half of the glaze over the ham about 30 minutes before ham is done. Spread other half of glaze in the final 10 minutes. Bon Appetit! So easy, so delicious!

ETA: I use Apple Pie Spice instead of individual spices. Turns out better

Spiral Ham Recipe (the ones already cured and spiral cut )


Inject ham.
1 part unsweetened pineapple juice
1 part honey
1/2t cayenne pepper

Smoke or bake at 225 for 3 hours cut side down in a deep foil pan.

Remove from pan. Place on sheet pan or similar.

Wet ham with drippings. Rub outside of ham generously with sugar mixture.

1 cup sugar - 1/2 brown sugar and 1/2 white
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon paprika
1 dash ground ginger
1 dash ground allspice

Caramelize sugars with torch.

Gourmet Warehouse Cherry Jalapeno BBQ sauce works very well as a glaze, especially when you do the ham on a BGE or similar ceramic grill over drip pan.
