Gumbo For 100 people

I apologize in advance if there’s threads about this already. I make chicken and sausage gumbo for my family and they love it. My daughter is getting married at the end of this year and she and her fiancé want gumbo. Any recipes/recommendations for making it for 75-100 people? Thanks

100 people at 12 ounce servings = 9.5 gallons of cooked gumbo

100 people at 16 ounce servings = 12.5 gallons of cooked gumbo

So you’ll need 10-12 gallons of gumbo which means a full 15 gallon pot at minimum. Cooking a full 15 gallon pot will give you 10-13 gallons since you’re never filling it up all the way to the rim.

What pot options do you have? I’ll be happy to share my recipe quantities depending on pot size.

(12) Rotisserie chickens
(10) lbs smoked sausage
(20) medium yellow onions
(10) bell peppers
(8) bunches of celery
-many cloves of garlic
-4ish quarts roux
-8ish gallons of stock

If you like your gumbo recipe and you know how much it makes, you could increase your ingredients to get the gallons you will need.

You could also make it ahead of time in increments and freeze it if you have the space.

If gumbo is the only thing they will be eating, then SixthAndBarone is correct. If gumbo is just one of many items, then five gallons should cover it. Frankly, I don't think you need that much.

That’s why you have to specify number of servings and what size servings. We all initially want to go by number of people, because that’s the normal thing to do.

Anytime there’s a thread on here with this subject, someone always says “if there’s other food, you’ll be good…”. And they are correct. Which is why you must break it down to servings.

Word of advice, make it a couple weeks ahead of time and freeze or have someone else cook it. The last thing you will want to be doing is cooking that gumbo the day before or day of wedding.

Me and Buddy cooked for a company luncheon and this what we used.

We put 7 rotisserie chickens
5 pounds chicken breast
5 pounds chicken thighs
8 rounds smoked sausage
8 pounds andouille
3 pounds hills hire farms smoked sausage
9 pounds onions
Bundle celery
12 bell peppers
1 1/2 cups minced garlic
3/4 baby food jar of file'
2 cups fresh green onion tips out the garden
2 cups fresh parsley out the garden
6 cups flour
4 cups oil for the roux


That fills an 80 quart pot about 3/4 way, we fed 90 men and had leftovers. I'd cut that in half and you'll be golden
