Gumbo Cookout Advice

Wanting to do some larger scale gumbo for a crowd of about 80-100 people. Most people will take and go. Currently looking into a 25gal Carolina cooker waxed pot with 100k BTU burner and a 60 cup rice cooker.

First question I have should I get a larger burner?

Second Question I'm considering 12oz gumbo and 4-5oz rice portion. Anyone have take-away container with lids you recommend?

25 gallons? That is a metric f-ton of gumbo.

If people take it to go, pack the rice separately in the 8 oz containers. Rice sucks up the broth quickly and gets mushy.

Pack the gumbo in the 16 oz for a single serving. Use the 32 oz if they’re getting two servings at once.

I would not cook more than 12 gallons of gumbo for 100 people, and I'd think you'd still have a decent amount left over.


A 12 oz. serving out of 1 gallon of gumbo gives you just over 10 1/2 servings, so do the math from there. Ten gallons should suffice but make a couple extra just to be safe.

I agree. 25 gallons is over twice as much as needed.

I cooked 7 gallons for 60 people. 12 would be plenty for what you need.
