Gumbo Cookout Advice

Wanting to do some larger scale gumbo for a crowd of about 80-100 people. Most people will take and go. Currently looking into a 25gal Carolina cooker waxed pot with 100k BTU burner and a 60 cup rice cooker.

First question I have should I get a larger burner?

Second Question I'm considering 12oz gumbo and 4-5oz rice portion. Anyone have take-away container with lids you recommend?
