You going to take the spine/bones out and butterfly or leaving them in?
Any I am assuming you scaled it?

No idea. How are thinking about doing it? I think I'd cook it like stuffed/ baked flounder? Remove the bones and guts, wrap in aluminum foil, and cook on indirect heat?

Otherwise I don't see how you cook it evenly? If its a big one you could certainly just grill the 4 fillets individually?

If you are going to grill the whole thing, assuming unstuffed with bones still in and head cut off and scaled:

Score it 3 times on both sides. Season with whatever the heck you want, and liberally oil it so the skin doesn't stick to the grill grates, flip once.


If it were me, it would take the spine out, butterfly it, stuff it with crab meat and broil it.

I'd buy one of those baskets for grilling fish to use so the flounder doesnt fall apart. Grill it whole but remove the guts behind the head and the scale it first.

How to Debone a Flounder

Its not hard.

I would keep it simple and use one of this fish grilles mentioned above. Really cheap at Asian Markets.
