Peche Chefs Discuss

It seems like I saw this on the board before. I have some whole freshwater bass that I am going to try this with tonight. Has anyone tried this? I figure the "medium" heat is around 300 degrees. I was also curious if the 6-7 mins per side was accurate.

Thanks,

Seems like Boss or Mr. Balls fixed a whole grilled fish with pics. Maybe both of them. Mr. Balls did one recently. I think Boss was a good while back.

You can Salt Crust the fish and cook it whole as well.

Yes. They are good. Lately I've just baked them whole in the oven. They're good like that too.

This is an oven roasted whole fish I saw on Ming Tsai's show that I posted a while back. I haven't tried it, though.

I did a 3-1/2 pound red snapper like that a week ago on the grill. I cooked it with the head and tail on. I cut slits in the side of it and shoved fresh oregano up in there if I remember right. Put oregano and lemon slices inside the belly. Rubbed it down with olive oil and salt and pepper and grilled it over medium high heat. Seemed like I cooked it for about 5 minutes per side. I didn't flip it until the skin was pretty crispy and would not stick to the grill. I thought it was pretty juicy and tasty. My kids and wife looked at me funny when I served the fish all hole with the head on but they ate the thing. I used some Bobby Flay recipe off the Food Network site. If I were to do it again I would cook smaller fish for each person versus a big snapper.
