I agree, and I'm going to slightly highjack...anyone know where the best pimento cheese in baton rouge is? I've always enjoyed Maxwell's an Whole Foods, but I've been kicking myself for not going over to Calvin's yet

I don't know where the "best" is in BR, but whole foods had a smoked Gouda pimento cheese that was so damn good I could have eaten it for breakfast, lunch and dinner. I originally bought it as a topping for burgers, but I ended up eating the whole container with crostini instead.

I ate it in the frikkin parking lot and had to go back in to get another for my wife and bought two more. That stuff is good.

Oh lawd. Pimento cheese is the best. I use Sam's Vermont sharp cheddar and a few jalapeños. All the juice from the pimento jar, and a spoon or two of mayo.

That's your foundation. You can add other spices, seasoning, but that's it in a nut shell. Let is sit up for 12 hours.

Eat it off your finger baw.
