Greens- mustard, collard

Cooked up some greens Sunday per a recipe from the OB (ducks & greens posted by Otis2). They were superb.
That said what other recipes can you suggest for greens? Ducks aren't always available, so I'm looking for some suggestions. TIA

1 tablespoon extra-virgin olive oil
1 large onion, cut into 1/4-inch dice
1 rib celery, cut into 1/4-inch slices
1 large carrot, scrubbed, trimmed and cut into 1/4-inch coins
3 cloves garlic, finely chopped
Leaves from 5 sprigs fresh thyme
1 tablespoon dried thyme
1/4 teaspoon crushed red pepper flakes, or more as needed
14 1/2 ounces canned, no-salt-added diced tomatoes, and their juices
2 bunches collard greens, stemmed and torn into bite-size pieces (about 8 cups; may substitute kale or mustard greens)
1 bag of frozen field peas
1 smoked ham hock
1 can sweet peas
some pickled Jalapenos
Sausage or bacon to your liking
stock

Brown the Pork. Remove.

Add the Onions, bell pepper, Celery, and carrots. Brown and then added the garlic. Cook for a minute ten add everything to the pot.

(i also add turnip root or rutabaga to the pot. Add at different times depending on which.)

great healthy soup that goes with cornbread.

Man, I am so glad you showed up so I can thank you! Those ducks and greens were so good. Thanks X100 for posting that recipe. Looking forward to trying the recipe with diced apple.

The one with apple is excellent. Make rice.

No ducks for the greens? Go with smoked ham hocks...come in a package of 3. Should be falling apart after 3 slow hours...I'll be trying this soon . I'll consider it health food.

Duck N Greens
Here's a great recipe for ducks that actually produces the best tasting greens I've had. Just about to put a
pot together now.Try it when you have a fe
w whole ducks to play with.

2 or 3 whole ducks, picked not skinned

1 or 2 links of good smoked sausage or andouille

3 to 4 Tbs oil

3 or 4 cloves garlic

3 or 4 bags prewashed greens, turnip, mustard or both
-
2 or 3 turnips ,peeled and quartered

1 cup water or stock

salt, black and red pepper to taste, or your fav seasoning blend

Procedure

In a large Dutch Oven on stove top, place ducks, seasoned to your taste with salt, black and red pepper, in a few T of oil
and brown well on all sides. Remove ducks.
Add greens to pot, water or stock,sausage,garlic, and place the ducks back on
top.Re seaon the pot with salt, black and red pepper. Cover with a tight lid and place in a 275 degree oven for 2.5 to 3
hours, until ducks are about to fall apart. The greens are frickin' money!

I use Tony's on the ducks before browning, with more in the greens and some black pepper, too, before the roast. Tony's is a good salt replacement.

Do not sub breasts or skinned ducks. And, try the Duck or Goose Ville Platte and the Duck a la Orange recipes, too, if you have whole birds.

Dang i have a couple bags of breasts but none whole, any reason in particular not to just use the breasts, maybe add them back after the greens cook for an hour or so? and what kind of ducks are you using?

FWIW, I had teal, grey ducks and widgeons. plucked, whole ducks. Can't wait to give the other recipes a go.

Bok choy works well with duck. Had roast duckling, bok choy, and turnips for our New Year's Eve dinner. Paired it with a 2013 Tensley Estate Vineyard Syrah.

Any. Teal will cook quicker than big ducks.

Breasts just don't have the fat content to sub in a dish like this and do it justice.

I like to cook them down with smoked turkey wings (instead of the more traditional ham hocks). The turkey has a lighter flavor, and the meat is good. They are showing up in more mainstream grocery stores these days.
