Aren’t they famous for their 1800 degree oven?

I don’t think they’re cooking in bags back there. No knock on sous vide though!

Correct, the ovens are 1800 degrees. If you ask and they aren't slammed in the dining room, you can go see them. I had a small tour of kitchen, didn't see any steamers.

I’ve been to RC all over the US (and Canada). My favorite is the BR location. My least favorite is in San Diego, which I have given at least four tries.

Incidentally, I once saw a waiter at the San Diego location drop a BBQ shrimp dish on a woman’s white cashmere sweater.

His name was T J Moran.

He owned TJ Ribs, Ruth's Chris, and Ninfa's in BR. He ran a tight ship.

Charlie Valluzzo was of the same mold.

Baton Rouge was better for them and very cultural without.
