I searched and only topic I found was an announcement that it was opening, sorry if Germans.
Went last night, 7:00, not packed but 20 min wait to order and 45 before we received our food so if you are in a hurry, you might wait to go. I thought it was okay, maybe my expectations were too high but I was not blown away and found it super expensive. $12 Marg in a 6 or 8 oz cup, queso was an absolute joke, that will have to change. It was tiny. The place is cool, looks great. I will go back but they have some growing ahead of them. For those who might be on the pickier side, I would wait a couple months. Love the fact you can eat at Cypress next door...

Is it a line to order or sit down to order? This makes a big difference. Being seated and waiting 20 minutes to order would be a much bigger issue.

The tacos were on the high priced side at white star but the queso used to be a pretty good deal. Sucks that changed.

Which tacos did y’all get?

Hopefully they ran out out the normal container for queso.

Lox, cream cheese, pepper jelly

Corn pop was a bad dude:
Catfish battered in crushed corn pop cereal and seasoned with Old Bay. Served with Delaware Punch

Like most new restaurants it will take some time to get a flow going. Def would expect average from that place.

Should be smoked pork marinated in carolina gold bbq sauce That is battered in pumpkin seeds and cheatos dust before being fried, and then topped with sour kraut and russian dressing

They have one called the Phillibuster but I didn’t get it.

All the tacos were good. Got Uncle Swine, clucks n balances, steal of the union, and the buffalo bill.

Pretty good size handmade margaritas and only $5 on Mondays.

Queso was probably overpriced at $7 but it wasn’t a super tiny container. Pretty standard serving.

Still got some kinks to work out service wise but that’s to be expected a week in. I’ll be back for sure.

Me & some friends tried to go by there for lunch today. They’re closed for a “Mental Health Holiday”. Gotta say never heard of that one before.

Went to Superior instead. This is 2nd time we tried to hit up Gov’t Taco during the week and they were closed.

I found the place strange. It doesn't seem like they're still coordinating w/ Cypress Coast. Was there some sort of falling out there? I don't like places where I have to stand in line to order and then stand in a different line to order a drink.

I don't think so, unless it's been recent. I ran into Jay drinking a couple beers in Cypress Coast a couple weeks ago.

I just spent 10 minutes reading a few reviews on Yelp and looking at food and restaurant pics. I also drove by the restaurant a month or so ago.

That's pretty much all the research I needed to figure out the problem.

It's a small place. To succeed, small restaurants either 1) have high volume and charge low to medium prices, which is your fast-food and fast casual restaurants or 2) do low volume and charge high prices, which is your typical fine dining restaurant.

Tacos are typically seen as a lower priced food, so there is sort of a mental limit that people put on the price of a taco. That's one problem.

The other problem is the size of the restaurant. It's small with no drive thru or quick carry out. So achieving high volume probably won't happen. There's only so many people you can serve there for the meal periods they are open: lunch and dinner.

They seem to be stuck in the middle. Charging medium prices and doing relatively low volume.

I haven't been there, but I get the feeling that people are eating their tacos, ordering a drink and then hanging out instead of leaving, decreasing table turns. So a crowded restaurant can be deceiving. They may appear to be busy, but the table turns are low.

This is understandable since the nice looking decor and relaxing atmosphere is giving off the sit and stay awhile vibe.

Like I said, this is fine if the prices were higher, but the food prices seem more in line for a eat, chill ten minutes and then leave type restaurant. Called a fast-casual limited service restaurant.

I get the feeling Jay and the gang was going for the fast casual limited service restaurant experience, but mistakenly created the next level up, the casual full service restaurant, hurting volume and thus sales.

(I don't know what the business relationship is with the Cypress Coast. Is Gov't Taco getting a % of booze sales? Or does GT sale there own booze? What's the relationship here?)

Like I said, I don't know how the booze thing works, but I'm pretty sure the booze is hurting table turns. It encourages people to hang out. So offering booze in an obvious fast-casual restaurant concept, in a small restaurant, that is limited on the price they can charge for a taco, and limited on the number of seats they have, ain't got long in this world.

Perhaps the solution is to establish in the customers' minds that you are a fast-casual taco joint 1st and booze joint a distant 5th. So more emphasis on speedy taco's and less emphasis on sitting around and boozing. I have a feeling that's what the original plan (concept) was.
