That looks like some fun. How do you clean the griddle and do you clean it after each cook?

Scrape it off, and wipe it down with a rag. Just like the Hibachi restaurant does

Scrape it. Then use a fine cleaning tool. Hot water and towels then oil it once it's cooled.

There's a grease trap at the right side of the front channel. It isn't big so a lot of bacon grease could flow over. I've heard that people tie a towel to the right front leg to soak up excess as well.

The grease trap looks like it would hold a pint, maybe more. It's something that could be easily modified.

I'd just splurge and get some grill brite. Just don't breath it in. Finish it off with some lemon juice. Thing will looks brand new after each use.

pretty sure you can get this stuff at Ducote's restaurant supply on florida.
