You boil all your potatoes that you are going to use for the day all at once on the stove. Like I said, it really saves time between batches. After you're done cooking your first batch, all you need to do is bring your water to a boil and throw your potatoes and crawfish in (along with whatever other vegetables you want. If the potatoes aren't cooked yet, you'd have to let them boil for a good 15-20 min before you can put your crawfish in. So you shave off about 1/3 of your wait time between batches.
It's just like doing other prep work before you put your other sides in the boil. Do you wait to half / quarter your onions, cut up your sausage, half your lemons, etc. until you are ready to boil each batch?

That's a really small pot, so obviously the proportions of seasoning are going to change because you aren't putting 35-40 lbs in that.

That's where I'm needing some guidance. Y'all make these huge batches, and I want to divide it down, but still have the bugs taste somewhat close to what they would if someone who knew what the hell they were doing cooked them.

I've never had to boil potatoes for 15-20 minutes. I put my potatoes in the pot with the seasoning, lemons, oranges, onion, etc. while the water it heating up. Once it comes to a boil I let it boil for maybe 3-5 minutes before dumping my crawfish in. My potatoes are always fine. Idk why you are having to boil your potatoes so long.

Honestly...I have never attempted to do that small of a batch.
I use a 125 qt pot and put in 35-40 pounds. I use 8oz of liquid boil and a pack and a half of seasoning, which translates to about 7-8ish pounds of seasoning then half that for the 2nd batch.
I guess you would have to get out and do the math based on the amount of pounds of crawfish you were going to do in a 30qt pot.
Honestly, I would see if I could get a small batch a few days ahead of time and then tinker. Put 2-3 lemonds, onions and garlic cloves per batch, maybe a half bag of seasoning per batch, and 2-3oz of crab boil and see how they do?

I've seen plenty of people dump beer in a crawfish pot but none have ever claimed it was to get flavoring from the yeast. It's mostly been from being drunk.

That's really small. You probably need right around 40lbs to feed 8-10 people, so one sack should be perfect. You wont be able to cook one whole sack in a 30 qt pot obviously. I would just go ahead and buy an 80-100qt pot. You should be able to find one for about $100.

Should be able to boil 10 lbs at a time. Allow 3-4 lbs of crawfish per adult.

I guess I was just trying to make sure the potatoes are fully cooked when all is said and done...so I've always cooked the potatoes until they were basically ready to eat (soft on inside) before putting crawfish in. It's the way I've always done it, so maybe I've been wasting my time...If you only need to boil the potatoes 3-4 min before adding crawfish and the potatoes are nice and soft after the long soak, then I may just do that.
