Gizzards in Gumbo?

I am making a big pot of Chicken and Sausage gumbo tomorrow. I have little over half a pound of gizzards too.

Have any of ya'll ever put gizzards in your gumbo? Should I just chuck it in with my andouille?

You should cook them before adding to the gumbo or they will be tough as shoe leather.

Gizzards were pretty standard with chicken and sausage gumbo growing up.

I typically put that in a dirty rice, but that sounds good. Love me some gizzards.

I agree I would save them for dirty rice, just in case someone you serve your gumbo to doesn't care for them.

I wouldn't put it in if I was making a gumbo for a big group, but personally IWEI.

My FIL adds a container of Gizzards and Liver to his gumbo, Ill fight a family member for them.

Gizzards and hearts if I have them. And if someone doesn’t like how hard is it to push aside? I don’t like okra but I’ll eat an okra gumbo and work around it.
