Does the piquante refrigerate well and reheat okay? I was thinking about doing it the night before. And BTW, who plays with a mikasa volleyball unless you play that indoor girly vball.

I honestly wouldn't. If you finish cooking at 10 Friday night, I'd cover lid and just shut er down and bring out to tailgate and fire back up first thing in the AM. It will be cool enough outside to let sit for about 8 hours.

Perfect timing. I have some gator meat I have been needing to use and have been looking for a sauce piquante recipe. Thanks. This will be my first time trying a piquante. Any major do's or don't not covered in the recipe for gator meat?

Do you soak the alligator meat in buttermilk and hot sauce overnight or does the long cook time tenderize it enough? I plan on taking the meat mallet to it for sure.

It took 1 hour to wipe out 5 gallons of Sauce Piquante..............it musta been good........

Thats got to be the Texas taste buds talking Kingwood.

The sauce piquant was right on. Stuff went faster than an imported beer in that red necks ice cheast.

BTW - Tell the little Aggie I enjoyed the corn dip..

No clue if anyone from here made it, but I did eat a bowl of gator sauce piquante at a tailgate saturday afternoon. It was pretty damn awesome.

Ours turned out pretty tasty. Gator meat was very tender and had a great flavor. Whole thing was pretty developed. Those cats from New Iberia..

It was at a tailgate party next to the creek across Nicholson extension... I only knew one dude there but they were nice and hooked me up with a bowl. Very tender meat and a great flavor.
