Always thought he was a weird choice for Galatoire’s but the food was good. Any idea on replacements?

I've wondered what a chef does there other than really run the kitchen. The food has been the same for a gazillion years with the exception of any specials they may have. I just ate there earlier this month and I can't even remember them offering a special that night. Does Galatoire's have specials? Maybe the steak restaurant does.

That guy seemed like a douche when he was on Top Chef.

I don’t know if a job like that would be less stressful since you’re not really creating an innovative menu or more stressful trying to live up to its past. Definitely seems like it would be hard to remain motivated and creative.

I suspect creativity could be a reason to leave and move on. I agree with you on the stress analysis.

Charleston fits a move.

I have never chosen to go to Galatoire's for the food.

ETA: and I love Galatoire's.

I know several people who don't think Galatoire's is all that special food wise. They still go a few times a year on a Friday just to spend several hours drinking, eating, and having fun.

Lord knows I don't go to Valvet Cactus in Nola for the food. My kids love it, the patio is nice, and I like the margaritas well enough.

Yeah VC sucks lol.

As far as Galatoires is concerned, the few times I have been there I found the food excellent. I've only been seated upstairs though, so there's obviously something else going on here that I am missing.

notiger summed it up perfectly:

I've eaten upstairs once when a business colleague made a reservation. The atmosphere is definitely different. It's okay, nothing special, as far as atmosphere. Downstairs has a totally different vibe. Much more festive and lively and louder. More of the Old New Orleans feel, as well. Upstairs was fine to talk business, but I love downstairs.

When I was there a few weeks ago, they were taking reservations for downstairs on some nights because upstairs was closed. I think she said it was being remodeled. This was on a Tuesday night and while the restaurant was crowded, it wasn't completely packed. The food was great. I'm still thinking of the oysters rock. They're just so darn good.

this must be why I've always been upstairs, because I always get reservations. Didn't realize downstairs was not part of the reservation process (unless I misread your statement)

yeah those oysters were killer. we went about 2 months ago, and I ate them up
