Frying chicken tenders...brine or buttermilk soak?

Last time I did some I brined over night in a salt/brown sugar combo then overnight in buttermilk/hot sauce. I want to cut one of those out...to see if there is a difference. Would you brine overnight and then use the buttermilk in place of egg wash or just soak in buttermilk over night and skip the brine.

I do find the brine helps chicken in the other ways I cook it. Not sure if the buttermilk is like doing the brine. I usually dont fry chicken at home but im wanting to up that game.

You could just season the Buttermilk and have the best of both worlds.

I wasnt sure if soaking in buttermilk does the same as the saltwater brine? I put hot sauce in my buttermilk but never put salt or other seasonings. I can tell a texture/moisture difference after chicken has been in a salt brine.

Cane's uses MSG brine. AKA Accent seasoning.

I season my buttermilk, then dredge in pioneer baking mix. Good stuff.

I've been wanting to do this and just haven't gotten around to it. I want to do it with whole chicken pieces. I have a gallon of pickle juice on hand. Just have to get moving.

I didn't know that was a thing...I might have some in the fridge maybe ill brine a tender or 3.

I think I am going to brine over night then do a buttermilk dip in place of egg wash.

Last weekend camping we cooked some tenders from a wild turkey breast that had been soaking in buttermilk, hotsauce, salt/pepper the night before. They were really good

I’m gonna catch more than a few downvotes but here goes.

The best chicken tenders I have made at home were Sous vide. All I did was put the tenders in a ziplock bag with a lot of Louisiana hot sauce. I then SV them in that bag, effectively poaching the tenders in the hot sauce. 145x1.5hr. Pull the bag and ice bath them for about 15 minutes, then batter and fry just long enough to brown the crust.

They were super juicy and had tons of flavor in the meat. The breading was just lagniappe.

I’m predicting at least 15 downvotes for telling people about an amazing chicken tender.

Several friends have tried the sous vide then fry method and all of them said the results were excellent.

I bet a sous vide in buttermilk would be absolutely heavenly.
