The ones you get at Rouses or Sams, is it ok to eat these rare?

Probably. Most of that stuff is frozen properly on the boat.

I get the ones from Sam's, defrost them, and sear them so the inside is still pink/rare. They've never made me sick.

Freezing can kill the parasites. Allegedly, it's safer to eat previously frozen fish.

We eat the ones from Rouses frequently. Just seared. Never had an issue.

Put them in a sealed bag and run cold water over them until thawed.

It must be fine. That is the only way we buy them and I have eaten maybe a hundred with never any problems. They always look very similar to these photos, which show my favorite way to eat tuna, unless I have it raw in sushi
