Frozen jambalaya doesn't get mushy?

Only if it was mushy when you put it in the bag

Nice to know! I've never tried freezing it...I usually just eat left overs until it's polished off. For some reason I thought the rice would get soggy or just fall apart. I'll have to try freezing a bag or two next time, that will make for an easy meal when I'm in the need for one.

When I make a big jambalaya I put left overs in vaccum sealed bags then freeze. When it comes time to eat I just boil the bag. heats it up nicely.

That sounds like a good plan...Whenever I think of frozen jambalaya, it reminds me of the Jambalaya Shoppe..Half the time their jambalaya is not that good even when fresh, but when they serve you jam that's been pre-made & frozen, it's really nasty.

More times than not, when I thaw and reheat frozen jambalaya(almost always in the microwave) I get a really good texture with the rice grains firm and seperated. I'm not sure why this is, but it turns out well.
