All my life I remember fish places I went too across the south always having slices of onion and pickles available or on the plate. I rarely paid attention to them.

Recently I started always having a slice of purple onion and pickles with my fried trout and I got to tell you mixing all those flavors in one bite taste great.

I should have been doing this years ago.

I slice onion rings and make a bed of them on my paper lined pan. That's what I drain them on. The fish stays crispy, and more than a few of us snack on onions.

I love throwing raw onion cut in rings with the fish to fry. So good. I also like taking mushrooms from a crawfish boil, marinade in buffalo sauce for a bit, batter and fry. Talk about good with ranch

Next time include a sliced of tomato (creole if possible).

And if you’re really feeling frisky, crush up a bag of Nacho Cheese Doritos and sprinkle over everything as a garnish/condiment. Kicks things up notches unknown.

I agree. A friend would have a big fish fry. He had a bowl of sliced raw onions and dill pickles. Once the fish was fried, he'd toss the hot fish around in the bowl and pile the mixture on plates. The first time tried it, I was amazed. I do it at home quite often. It's a little like tartar sauce without the mayo.
