Fresh pork sausage

When cooking fresh pork sausage, do you season it before you start your cook?

I always add black pepper and garlic powder, occasionally sage, fennel seeds, and red pepper flakes.

Yes, I always season, then brown my meats. I also adjust the seasoning throughout the cooking process to make sure that the finished product is delicious…

Sausage is ground meat, seasoned, and stuffed in a casing. I’ve never heard of seasoning seasoned sausage. Are yall seriously seasoning the sausage casings?

I usually buy fresh pork sausage that is already seasoned. When I make my own, I add seasoning to the meat before stuffing in casing. If making smothered sausage with onions and a brown gravy, I’ll add seasoning to the gravy as needed.

WTH are y'all up voting this but down voting where I basically said the same thing - there is seasoning on the inside if it's made right. The question was about boudin, which better already be seasoned well. I never season sausage that is made with seasoning. Maybe the question I thought I was answering just wasn't that.

I think the question was referring to bulk ground sausage, not sausage on a casing.

I considered this, but he didn’t say bulk sausage. Regardless, why would you season seasoned bulk sausage?

Because a lot of bulk sausage isn’t seasoned enough for my liking.
If I look at it and can’t see the seasoning in it I add it.
