Has anyone ever noticed when they’re smoking something for an extended period of time how the flies multiply? Is it just me? If I have a long smoke going on something it’s almost unbearable the amount of flies that gather on my porch

Can't say that's happened to me when smoking whether cold smoking or hot smoking. I'll cold smoke salmon at around 90 degrees, smoke bacon and jerky a bit higher and then stuff like pork butts, briskets, chicken, etc. all get smokes no less than 250 degrees.
You would think the smoke would help keep the flies away.

Nope. Usually the opposite

Absolutely. They love the white wooden post on my patio near my smoker whenever I’m smoking.

Always... I burn rosemary on my grill. the smoke is alleged to drive them off or I use a mapp torch to burn their wings off. Flies become Crawls...

Yes. Every time I smoke, flies appear. It’s common.
