Fish Poboy Recs?

Still have some trout and redfish left from last weekend. Been working in Nola the last 2 days, picking up Dong Phuong poboy bread at lunch beore I head home.
Gonna fry the fishes tomorrow. Sometimes I do big pieces, sometimes small ones, so I haven't decided.
Any recommendations on general fish poboy style or, more importantly, different stuff with which to dress them?
I've tried slaw etc and of course lettuce, tomato, and mayo have gotten us this far, just wondering if y'all have any crazy ideas.

Tossing the just-fried fish with a crystal & butter sauce is mighty tasty....or in a garlic/butter mix.

I gotta say the standard lettuce, tomato, pickles and mayo is hard to beat. But I guess I'm a purist.
BTW - I'll be bringing the family down for St Pattys Day this year. Hopefully youi'll be around.

Good start with the bread, standard dress topping but use sandwich spread instead if mayo.

how about reversing the cooking methods of the ingredients?
Instead of frying the fish you can grill or pan-sear it .. then dress the poboy with fried green tomatoes and/or fried pickles

Small pieces with trout. I like the big fillets when it's catfish. I make a homemade remoulade, but my wife enjoys that Louisiana brand remoulade in the bottle. Maybe throw some fried green tomatoes on it since you have to break the fryer out anyway.

To enhance the bread, put the whole made sammich in a press. This will change everything for you without messing with the traditional dressing.

I like this idea too, and I got 15 damn poboy loaves so I will try that with something else.

Miracle Whip or sandwich spread on a po-boy of any type is something that should merit drawing and quartering especially a fish one.

Make a chipotle mayo by mixing chipotle powder or the adobo sauce from a can of chipotles with mayo to taste. Gives it a nice, spicy kick.

one of the best little quick homemade sauces out there.
also can mix adobo sauce with sour cream and put it on tacos.
