Is that the big steel pan over a propane burner that collects all the food / oil in the middle of the pan and burns it?

I just dont know how its possible. I am not a fan of this set up, personally. Seems like it would be a complete pain in the arse to clean everytime you use it.

I'm gonna treat it like a hybrid flat top/wok. And I'll clean it with water, heat, and a sheen of oil afterward.

Looks just like my stainless wok. Used it 1 time, never again. Way too hard to clean that thing.

I have one from Southwest Disk..
I cook just about anything I would cook in a cast iron skillet or pot.
Does great breakfast / steaks / hamburgers / any type of stir fry.. fajitas you name it.

You can probably use it like a wok and make a very good stir fry.
It also looks like a big paella pan, so that could be an option.
