Fennel Bulb Uses

Subject says it all. I need some recommendations for fennel bulb use. Any favorites?

My wife slices it very thin on the mandolin and sautés in olive oil, adds some kale, then avocado, toasted pine nuts, and parm-reg. Then a little garlic vinaigrette. It’s delicious.

Roasted works well. Add some parm and fresh thyme.
Works well raw in a salad with oranges and a vinaigrette.

- mussels with fennel. I've had them cooked in both a tomato type broth and a cream wine broth. Both were good, might have liked the cream best.

Fennel is a very versatile ingredient that pairs well with mild flavored proteins such as pork, chicken, fish and shellfish. It can be prepared in any number of ways and serve many different of purposes.

Shaved really thin, marinade like picked red onions. Mix in a salad maybe. Try to put something sweet with them.
