Nbd - St. Bernardus Extra 4 Singel. First time served in the US since the 1970s. Really refreshing.
The St. Benardus rep is here.
He says their brewery got all their recipes from Westvleteren in 1946 when Westy's head brewer came to work for them. He says the only reason the beer tastes different is the waters. The recipes are the same.
Seems like this was being debated recently on here.

Non-compete clauses must not have been a thing back then.
Sbd
I just ate some raspberries that are still on my palate and it's working favorably with this beer.

I didn't debate it, I declared St.B is no Westy. It doesn't have near the complexity IMO.Different water can make a huge difference. And just because you have a recipe doesn't mean you can execute it.

Is he still there? I think St. B uses a different yeast than Westy too. Westy uses Westmalle yeast and St. B uses their own proprietary yeast as I understand it.

1-2BD at peche was canebrake for lunch.
Peche was delicious. Shared small plates with the wife and in-laws. Highlights were crawfish-jalapeño scallapini. And the best to me was raw bar item: smoked cobia with pickled corn and dill. Will revisit for dinner.
3-4BD: parish Envie at Chartres House in the quarter. Nice day in Nola.

He says that st bernardus uses the original saint sixtus yeast and that westy now uses the westmalle yeast.
So there you go. Water and yeast. Big difference.

We've already been talking about you. Apparently you are going to get a shitload of 3 Way IPA next week. Could be an issue if you don't like the stuff...
