Speaking of Urban South:


Announcing two small batch beers for you this Friday!!!

First up is Coconut Chocolate Vanilla Stout. This is a decadent milk stout brewed with Cacao nibs, shredded coconut and vanilla bean. Rich milk chocolate and vanilla give way to a refreshing coconut finish. ???? Also Releasing Tropical Reflections. This delicious IPA is hopped with Denali, Azacca, and El Dorado and finished with Mango Puree and a touch of apricot and peach. ???? #smallbatch #beerrelease

FBD is barrel aged. My persistence with outdoor drinking has been rewarded. If you don't like the weather in chicago, wait ten minutes...

To answer OP question, i don't think you're supposed to age saisons, sours, etc. My understanding is that boozier, barrel aged beers benefit because the heat mellows out and the beer becomes smoother. Not what you're hoping for with a sour or saison.

This isn't great advice, tbh

In the case of Farmhouse Slang, which is brewed with Brettanomyces, the beer is still actively developing in the bottle. Aging it will allow the beer to take on a complete different character. Brett can throw all sorts of crazy, fruity flavors when it has had time to work its magic.

This is true for almost any saison that is brewed with a "wild" yeast and packaged unpasteurized. Those Hill Farmstead saisons are absolutely fricking incredible with some time in the bottle (not that they aren't good fresh).

One day you'll have a saison that will rock your world and you'll embrace the funk. Until then, keep on sippin' your stouts. But try a saison every so often. You might be surprised!
