No beer today. The wedding I was in last night did a number on me. I guess pounding 6 glasses of chardonnay within 30 minutes of the reception starting results in you blacking out by the end of the reception??

Anyway, I'll be on it tomorrow with T-Ham as we smoke some wings and ribs on my WSM. Assuming he survives the wedding he's going to tonight.

I'm observing the wsm right now bro. Trying to stretch a bag across what would effectively be almost 48 hours of smoke. It's done it before, just waiting for it to settle a bit more. I know y'all are laffy dudes, telling you, get you your favorite boudin and sit it down on top for an hour/three beers/etc. Eta just general advice imo things with skin do better if you smoke at a higher temp, because the skin don't cook at 225. If y'all do wings do them at 300+, no benefit to low and slow with no fat like there is with pork shoulder and brisket...jmo.

I was not surprised the boudin was great as my fav boudin probably is best stop smoked, but I wanted to smoke it myself. The twice smoked andouille blew my mind though.

Bro your foot is fugly. I mean seriously. I had two gin and sodas, my palate has since returned. Since that time, I've had the pleasure of a XBD of a Bear Republic Red Ale and a XBD Tank 7 (which I'm pretty sure is my numero uno). If La got Lagunitas, BR, and Boulevard, I would be one happy motherfricker.

It is nasty. But my hands are masculine yet gentle and tender. We are pretty lucky in Texas. In the last year we have gotten so many good beers from beyond and so many good local breweries that I almost feel like I live in a beer destination place......almost....
