Favorite Trout Recipe?

Me and some buddies are going up to the Little Red this weekend to do some trout fishing (rainbows, cuts, maybe a couple brown here and there).

Anyway I'll have my Akorn with me and limited kitchen supplies. Any suggestions for cooking these little guys would be appreciated.

FWIW we've done the foil wrap with butter & lemon but wanted to try something different.

I like the foil method for trout tacos. Try putting some mango salsa and coleslaw on them.

I've also had trout topped with evo, split cherry tomatoes, garlic, thyme, and a squeeze of lemon.

I make Emeril's herbed trout recipe when we get steelhead filets...it's my favorite way to make trout.

Sprinkle trout with salt and pepper.
Dust the fish filets in the flour.
Heat the olive oil and butter on medium high heat.
Add fish filets and cook until light brown on both sides.
Remove from pan and cover to keep warm.
Return pan to heat and add 1 T butter.
Add the almonds and saute, then add the fresh lemon juice.
Heat it through, then spoon over the fish filets.
Serve with additional lemon wedges.

Would it not fall apart real bad? Didn't think trout was a "fry" fish.

Cancooker fish

I do seafood steam pots with my cancooker. It does fish pretty good but this guy might have overdone it.

He is a nasty cook. Wiped his hands with the wet fish paper towels, then picked up the can with his fish hands, then dug in pockets with his fish hands and emptied them on the cutting board the raw fish was on. Ewwww...

The wine looked like a bottle of lavender scented dishwashing liquid. Reminded me of the Dawn I use.
