Favorite summer dessert, share a recipe

Mine is

No-Bake Chocolate Eclair Dessert
Ingredients *
Filling: *
2 (3.5 oz.) boxes vanilla instant pudding *
3 c. milk *
1 (8 oz.) container Cool Whip *
Graham crackers *

* Topping: *

1/3 c. cocoa *
1 c. sugar *
1/4 c. milk *
1 stick (1/2 c.) butter (or margarine) *
1 tsp. vanilla?
Instructions
1. For the filling: 2. Combine pudding mix and milk; beat. Stir in Cool Whip. 4. Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers. 5.

For the topping: 6. Bring cocoa, milk, and sugar to a full rolling boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted. 7. Pour chocolate topping over the top layer of graham crackers. 8. Refrigerate over night.

Homemade vanilla ice cream

2 tbsp vanilla
2 cups of sugar
1 can sweetened condensed milk
1/2 gallon of whole milk
1/2 pint of heavy whipping cream
4 eggs

Let me help you out with my favorite recipe

3 large egg yolks whisked well with 1/2 cup (give or take ) fresh lemon juice , Myers if you have any, then whisk in 1 can of condensed milk, plus lemon zest

Pour in a shortbread pie crust and put in 350 oven for about 15 minutes just till pie sets, throw away the egg whites because meringue just sucks,

Why do they call it icebox
Do you put it in fridge after baking to make it cold

It is very good, not sure why they call it icebox pie, maybe to differentiate from lemon meringue pie????

Yes put it in the fridge and serve cold

Jello Poke Cake. We have this for the kids just about every other weekend by the pool.

Ingredients
1 white cake mix box and any ingredients listed on box
1 3.3 oz jello mix raspberry, cherry or strawberry
1 cup boiling water
1 cup cold water
1 tub Cool Whip or Homemade Whipped Topping

Prepare cake mix as directed and bake in a 9x13 pan. Let cool for 15 minutes.

Poke cake with fork at ½ inch intervals.
Prepare jell-o as directed. Spoon over cake mix until jell-o liquid is all gone.
Chill 3 to 4 hours and top with whipped cream. Refrigerate until ready to serve. ENJOY!

We also do this ice cream sandwich cake:

24 vanilla ice cream sandwiches, unwrapped
2 (8 ounce) containers whipped topping (such as Cool Whip®), thawed1
(12 ounce) jar hot fudge ice cream topping, warmed1
(12 ounce) jar caramel ice cream topping
1/4 cup chopped pecans, or to taste

Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch dish; top with a layer of whipped topping, hot fudge topping, and caramel topping. Repeat layering with remaining ice cream sandwiches, whipped topping, hot fudge topping, and caramel topping, ending with a top layer of whipped topping. Sprinkle with pecans. Cover dish with aluminum foil and freeze until set, at least 30 minutes.
