call me crazy but last time i looked at the title of this thread i saw "favorite sausage for gumbo??" ....isn't everyone entitled to have their own favorite? if you want a smokey flavor add smoked sausage, if not use the fresh....or be like the people who invented gumbo and use whatever the hell you have on hand!

andouille all the way....I make a trip to Addis and load up on tasso and andouille at Benoits...their beef jerky is very good also.

Any of the Conecuh sausages (they have some bigger smoked sausages that work well for gumbo) are the best sausage in the WORLD.
