I like it. As long as there are lots of peppers cooked into it,

I like it on enchiladas too.

Have you ever had canned enchilada sauce? Worst thing I've ever had.

Believe me, take that to the people who "grew up on it" and they'll come at you with stakes. I've watched people melt down over it.

Personally, I like it all. But the ranchero name refers to the chili-tomato sauce on top. Without a ranchero sauce, it is huevos... and tortillas. Or chorizo. Or whatever.

Even Wikipedia has it right.

Hell yes. There's a killer tamale stand by my camp run by a big black messican. Fried or poached eggs and tamales are my go to breakfast. They will cut a deer hunt short though.

Well yeah. If you go to a restaurant in Wisconsin and order gumbo, you're getting something a hell of a lot different than what you and I consider gumbo.

Anyway, this didn't need to go this far. I'm sure what you posted tastes fine on it's own for what it is.
