My favorite is a roasted garlic and tarragon aioli. It goes great with almost anything. It is possible to do it by hand, but a food processor makes it a snap.
6 egg yolks
1 tsp of kosher/sea salt
1/2 tsp of freshly ground pepper
6 cloves of roasted garlic
1 TBS of fresh tarragon
1/4 cup of white wine vinegar
Add the above ingredients to the food processor and fire it up.
Slowly drizzle your oil of choice, I like canola because of its neutral flavor, probably about a 1/2 cup in total. This mix makes a great base for chicken salad or even a spread for poached fish.

I always have some of this on hand. If you ever get tonkatsu (panko breaded deep fried pork) at a Japanese restaurant, this is the sauce that accompanies it. I always have some on hand and it goes great with panko breaded chicken and fried oysters.

Back in the 50s potato chips existed and BBQ sauce existed. But BBQ flavored chips did not. My dad dipped his potato chips in BBQ sauce. It was great.
