Experimenting with a sirloin roast tonight

I had a craving for brisket, but don't have the time to cook it, so as I was browsing the roasts, I came across a 3 lb sirloin roast.

I have rubbed it down, letting it come to room temp. I plan to sear it then roast it at 325 for 45 minutes (15 mins a pound).

I will let you know how it comes out.

You need to cook that thing at least 3 hours

It's not thick, maybe 2-2.5". Three hours will be way too long.

If you have a broiler pan with a rack, you should put a little water or wine on the bottom to keep it from drying out.

Cook it medium rare. Refrigerate then slice very thin and heat in a skillet with a bit of an jus and serve on a Kaiser roll ala Baltimore pit beef.

I do have on a rack with a foil tent. I added Dr Pepper in the bottom along with a few spices.

Final results, a little tough but too bad. I ended up cooking it for 45 mins @ 325, then 30 mins @ 170.

I let it rest for 10 mins then thinly sliced, served on potato roll with mayo and my reduced Dr Pepper au jus. Pretty damn good.
