Elk roast - need proven recipes

Was gifted an elk round roast and want to hear how you all think I should cook it. TIA!

Season like you would any other roast but you'll probably have to cook it in a pressure cooker.

Elk roast is not a chuck roast, cook it like beef tenderloin, med rare. it's better than beef.
I would wrapp in bacon and cook at 400 until 120 max then rest for 20 min. Serve with horse radish cream sauce, and garlic aolli..

this sounds fantastic...
we ate it for alot of years by stuffing it with garlic, browning all sides then cooking on a stove top with liquid up about 3/4 to the top of the roast. once it starts coming apart, let cool, slice against the grain. reduce liquid to 1-1.5 inch deep, add roux and make a nice gravy (onion powder is nice) then sit roast in and let go on very low for an hour or so...then serve on pistolet buns with mayo/horseradish

Any idea what kind of roast OP? Elk is great so I wouldn’t cook it like a cheap beef roast with a bunch of veggies unless you want it to taste like a beef roast which it will.
I’d probably sear it, then cook it slow until temp, then slice it.

Just don't over cook it! 120 internal temp tops.

I’ve got no experience with elk roast, I did a deer roast wrapped in bacon On the smoker for a few hours and then braised it. Came out decent but needed more fat!
