Eggplant Parmesan Sandwich

I just had a pretty fricking amazing sandwich for lunch. Had some eggplant parmesan leftover fro the other day so I made a sandwich with a stack of it. The red sauce is what I made from a bunch of San Marzano tomatoes from my garden.
Oh, the eggplant were from the garden too!
