Easy Cheesy Omelette

I checked on the chickens this morning before the rains came and picked up a couple of fresh eggs. Came inside and whipped up a nice cheesy omelette and toasted a couple of slice of multi grain bread and except for missing a few slices of bacon it hit the spot.



Oh yeah, I snipped some fresh young tender green onions for the eggs too.



Colby and Monterey Jack cheeses made for a great omelette!

this is da truf! also add green red peppers and white onion.

publix makes the best subs and I ordered my king cake.

Crack 3 eggs into a deep container and I use the stick blender to scramble them, gets 'em fluffy too. Add the green onion, sometimes the salt and pepper and give it a last quick blend. Melt about 1.5 tbsp. butter in a med. hot nonstick pan(I have two just for eggs) and pour eggs in. Let them cook give a swish with a spatula to even cook eggs. When almost not quite done but set add cheese and fold 1/3 over the cheese then the other third. Let set a few second and flip over. Remove from fire and plate.

The 2 keys to omelettes are: 1) get the pan up to cooking temp thoroughly (I use a true medium), depending on the pan can take a few minutes; 2) that hot pan is going to take a few minutes to cool down so remove from heat BEFORE your omelette reaches perfection.
