You cans ha e dark gumbo without it being a thick sludge. But your right gumbo in Cajun country is terrible.

1. That is slop and is not representative of good Cajun gumbo.

2. Your OP looks amazing and I’ll bet it tastes freaking awesome but that is a stew or probably closer to a fricase. Either way, I would probably eat seconds and thirds lol.

3. This is what a Cajun prairie gumbo looks like.




4. I would love to see a step by step of how yours is made. That roux must be black as the ace of spades when the trinity gets thrown in. I’ll bet the whole house smells amazing!

I have never had or even seen anything like that served as homemade (or restaurant made) gumbo, so whose house are you eating at?! You can’t really believe that is representative of Cajun gumbo. That is probably gumbo from a can.

Yeah…no way that’s an Acadia or St Landry Parish gumbo.
