East Texan needs etouffee recipe....

Tried to make a first meal of etoufee last night. Didn't turn out exactly as planned.

Basically was the Holy Trinity plus da Pope (some minced garlic) in a roux of butter and flour. Added some spices and some sausage, but the result tasted more like soup than etouffee. And it wasn't dark brown or red, it was more a tan color.

Need some help or recipes. I love etouffee and want to perfect a dish.

Crawfish Etouffee

Need:
2 cups chopped onion
1 cup chopped bell pepper
1 cup celery
2 cloves garlic, minced
1 1/2 cup crawfish
1 1/4 stick butter
6 Tablespoons AP Flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon Slap Ya Momma
1/4 teaspoon liquid crab boil
Chicken Stock

To Taste – cayenne pepper
Cooked rice
Chopped Green Onions


Sauté onion, bell pepper and celery in 1/2 stick of butter until tender. Add garlic and season with 1/4 teaspoon of liquid crab boil, salt, black pepper, and Slap Ya Momma. Cook until garlic is tender.
In a skillet melt 3/4 stick of butter and add 6 Tablespoons AP flour 1/2 teaspoon salt, 1/4 teaspoon black pepper and cook to make a blonde roux. Add 1 cup (more or less) Chicken Stock to the blond roux to make a thick gravy. The gravy needs to be a little thicker than you want the finished etouffee.
Put the blond roux in the pan with veggie mixture. Stir well. Taste and adjust seasoning.
Add crawfish and cook until crawfish are done. If the etouffee is too thick add some chicken stock.
Season to taste with salt and cayenne pepper.

Serve over rice and garnish with chopped green onion

Pretty sure a lot of the color comes from the crawfish fat. If you only added sausage you aren’t doing it right.

A poster on here, Cajunate, posted this recipe a few years ago and I have been making it ever since. It's really good.

1 1/2 qts. shrimp stock 

4 Tbsp. butter 

3 lbs. shrimp

5 dashes Tabasco 


salt to taste 

fresh ground black pepper 



A 6 qt. enameled cast iron dutch oven is what I used to cook this in. 


Heat the Dutch oven and melt 4 Tbsp butter to saute the onions, bell pepper and celery. Add the garlic toward the end of the saute to keep from burning the garlic. 


Remove the seasonings from the pot and heat the one stick of butter and add the flour to make the roux. Stir and brown to a dark peanut butter color. 


Add seasonings back when roux is done along with the bay leaves, thyme, cayenne pepper, and paprika. Simmer about 5 minutes. 


Add the shrimp stock and tomatoes and bring to a boil. Once it reaches boil reduce to a simmer for 7-8 minutes. 


I like to then wisk in a few tbsp. of butter to sort of emulsify in smoothly and then add the green onions. 


Add the shrimp, Worcestershire sauce, Tabasco, salt and pepper to taste. 


When shrimp have turned pink it's ready to serve. 


I have taken to liking Jasmine rice more than any of the usually used rice here in Louisiana. Serve with whatever rice you prefer. Enjoy!!!

If I didnt have access to crawfish, I would use shrimp, add half a cap full of crab boil to the pot, and use some better than boulion lobster base as stock to get the desired taste.

Might get slaughtered on here, but we use the one out of an Emeril cook book and it is always a hit.
