Dried shrimp for a stock????

Planning on making a shrimp gumbo tommorow but I wasn't able to find any head on shrimp for my stock. Has anyone ever tried using dried shrimp???

Yeah that would be a good substitute

Just remember that those are pretty salty. Don't know if they're salty enough to make a huge difference but keep an eye on it.

That's the one thing I'm worried about. I guess I will be ok if I don't add any additional salt .

You could also use shrimp powder. A little goes a long way though.

I doubt I could find shrimp powder here. I am hoping there is an Asian market open tomorrow. That is the only place where I might find dried shrimp where I live

I must have gotten a few bad bags of those shrimp. I've bought them a few times to investigate the possibility of using them to strengthen a stock, but I couldn't stand the smell when I opened the bag.

I've also used Minor's a boost for stock when I didn't have enough shells to make as much as I needed. It works. Have to watch the salt, but it's better than any other I've found and I've tried several.

ETA: If I know I'm going to need a lot of shells, I call one of the local seafood joints I frequent and ask them to save the shells for a day for me since they peel a lot of shrimp for their customers. They give them to me free, but I'd gladly pay for them.

my father in law swears by them, but he makes the worst gumbo I"ve ever had in my life. The house smells like low tide. Rough stuff

Very salty and they will stink up the whole house.

However to use them, rehydrate in water for about a half hour then rinse well. This removes a good bit of the salt.

Albertson's has them. $3.99 for a few ounces.

I picked up a pack at a Mexican grocery store. They are about the size of a damn 50 count shrimp. Def not like the ones you see back home. They have the shells on also. I think I will abstain. Im making a stock from the 2 pounds of shrimp I have and I also picked up a couple cartons of seafood stock from the store.

Watch the store bought seafood stocks. Some of them have an off taste and have more sweetness than you might like. The best one I've found is the Minor's. I haven't used it in gumbo, but I've used a little in a creamed bisque when I didn't have many shells and it worked fine. A little goes a long way.

The Cheniere (Grand Isle) was a shrimp drying dock for many years and I saw it in operation. There is nothing unsanitary about drying shrimp or dried shrimp. If you eat chicken or beef from any store you shouldn't be worried about such things.

I eat tongue....and dried shrimp, and hot dogs and livercheese and all kinds of things that might scare you.
