I make a ‘creamy’ soup using cauliflower and chicken broth that I blend with the immersion blender. Usually add chicken, spinach, whatever other veggies I have that are fixing to turn and a splash of lemon juice for brightness. I love soup season

Looks great,but if I put in that much work with fresh veggies there is no way I'm finishing it with canned corn and peas.

Oooh, looks good. I'm going to take that and put my own twist on it.
Side note: my Maw-Maw made a good vegetable soup when I was a kid. It had a watery tomato broth. The tortilla soup at Superior Grill is real similar in flavor. Would love to be able to replicate it

Bump. Defrosted this today for lunch, and it’s just as rich and creamy as it was the first time.

LOL..





If you like the idea of vegetable being heartier and rich vs. brothy, I can’t recommend this method enough.

I want to try this, that roasted vegetable puree looks awesome for the base. What does the parmesan rind do? Add saltiness?
