Y'all all are overcomplicating this

The deal is likely that the tips that were coming in, due to the business model of the place, were not getting the employees up to minimum wage. As such, ownership was having to come out of pocket to pay wages.

Either way, the place will lose some customers and lose some employees by not being able to pay them very much.

I don't see a scenario where people decide to start going there based on this policy. They will only lose customers.

i'm 200% in favor of restaurants just paying people a salary and then charging me just for food. Places that suck at service will eventually stop getting my business.

What is the difference between him raising prices 15% and just charging a 15% service fee?

The pricing of one’s food is literally what funds the rest of the operation. Has been that way since the first restaurant ever. Monetarily there may be no difference besides the pomp and circumstance of implanting a service fee

If the industry is going to make a permanent change on how they pay their employees, there are two options - 1. Ownership takes less profit and redistributes it or 2. Restaurant raises its prices

Raising prices is inevitable and they may as well rip the bandaid off and get the customers more comfortable with paying more as soon as they can. A service fee is more tacky and not well received instead of just saying, we are raising prices to pay our employees more. They are probably leaving the door open to implement both and really piss people off

They aren't doing this per se. They are raising prices, but they are doing in a way that hides the cost on the menu.

It's obvious why they didn't just raise the prices like some other restaurants with a one time announcement.
