Sea salt and cracked black pepper is all you need. Anything else takes away from the flavor of the meat, you dumbarse.

Oh...yeah, and don't forget the microwave to make sure they reach optimal temperature before boiling.

Exactly.

And the name "craw-fish" is a derivative of the African word "bro-brish", which coincidentally sounds like Breaux Bridge, which happens to be the crawfish capital of the world.

No one's mentioned the cream of mushroom soup or the velveeta.

what does it matter if they drown if you're about to boil them anyway?

I am an enjoyer of finely prepared crawfish. My husband does the cooking. (I think these days he seasons the water and also dusts in the ice chest.) Personally, I will eat crawfish either way. I'm not an either or person on this issue.

I can definitely enjoy crawfish if it's both. However, the water MUST be seasoned, regardless of dusting or non-dusting. I hate sucking bland guts/juice out of crawfish.

Well seasoned water and no dusting (DI's in Basile), great.
Well seasoned water and dusting (Crawfish Tyme in Lafayette), great.
Un-seasoned water and dusting (Gator Cove in Lafayette), huge disappointment.

You'll need a burner and some propane and an 80qt pot.

Secret family recipe:

Per sack of crawfish

1 6pack of beer
1 sacksize seasoning
1 8-12 oz bottle of liquid boil
1 box salt
4-6 yellow onions
6 lemons
2# sausage
6 corn (1/2 cob size)
1-2 pints mushrooms
3-5# small red potatoes

Drink at least one beer gathering up all the stuff. Open beer #2, Put potatoes, onions (cut in half), lemons (half and squeezed), seasoning, liquid boil, sausage and ¼-1/2 box of salt in water bring to boil. Open beer #3, depending on size of potatoes, boil for about 3-8min to start potatoes cooking, Open beer #4, put in crawfish. As soon as water begins to boil (just barley) again shut off gas (Open beer #5) and let soak. Soak for total of about 20-25 min. About 10-15min prior to eating out open beer #6 and put in corn and mushrooms. (sooner if you want corn and mushrooms to be real spicy)

If your boiling more than one sack on the second time around don’t put anymore salt and add about ½ - ¾ of sack seasoning – all other things remain the same, increase beer consumption by 2-4 beers

If you boil three sacks, on third sack dump water and start with clean water all over again, forget beer and start on wiskey

Don’t forget squeeze butter for potatoes and corn

I have not. A friend asked about them a week ago on FB. The responses were positive, though I think those people were friends of the owner's family...so take that for what it's worth.

If I'm going to buy crawfish already boiled, I tend to stick to places I've already had and know I like. Nothing pisses me off more than paying $5-6/lb. and getting bland crawfish or a serving where 25% of them have straight, mushy tails.

Closer to home, Krazy Klaws is damn good.

A friend just opened a place in the Carencro/Sunset area called Jujubugs. Haven't tried them yet.

On the main drag in Sunset. Noticed the sign last month. Didn't realize it was new. I'll expect a full report in 7-10 business days.

Same with Ham on the new Crowley place.

I will accept any name, except redneck. I am not a redneck. I have never been a redneck. I will never be a redneck. Period.
