Doing Peruvian Chicken for the first time

Chicken is marinating. When I cook it, should I give it a little smoke, or keep it clean?

The name? I dunno. The ingredients, I guess. It has anji chili paste, but most of the ingredients are local.

There is also a spicy cilantro green sauce that is probably Peruvian in origin.

Someone on here posted about eating this within the past week? Maybe in one of the WFDT threads. I looked up the exact same recipe after seeing their post to see what it was.

That is not the same recipe I used. There are a ton of them out there. I used a modified version. There are different versions of the green sauce, too.

1 cup chopped cilantro- thin stems ok.
¼ teaspoon kosher salt
squeeze of lime ( 1 tablespoon, save other half for salad)

Put everything in the blender and blend until smooth.

Back before we had a clue what Peruvian chicken might be, an 80’s hidden camera show set up a Peruvian chicken stand. It was chicken boiled forever, with no salt or anything.

Customers would be caught on cam saying how shitty it was. Then a camera crew would show up and say they were filming a commercial. Care to be in it? Suddenly, they fricking loved it and shouted its praises.

I still recall an old black guy who told a fellow diner, “This is the worst (bleep)I ever tasted.” But boy did he love it when the commercial cameras were rolling.

Looks great. I spend about 30-35 days a year in Pucallpa, Peru and my favorite part is the food. That looks right on.

If any one is interested in easy Peruvian I recommend Lomo Saltado or Aji de Gallina
